When Wynn Al Marjan Island opens its doors in spring 2027, it won’t just be the UAE’s first integrated resort with a gaming licence that turns heads. It’ll be the 22 restaurants, bars and lounges that keep people coming back.
We’re talking an Alain Ducasse steakhouse spanning two floors. A celeb-favourite supper club making its international debut. Indo-Persian, Japanese, Italian, Greek, Lebanese and Indian concepts – all under one (very tall) roof on Al Marjan Island. And that’s before you get to the beach club, pool bars, nightclub and food hall.
Here’s everything we know so far about every dining experience headed to Wynn Al Marjan Island – and we’ll keep updating this guide as more names are revealed.
The Two Headline Restaurants Already Announced
Wynn didn’t exactly ease into the restaurant announcements. The first two names dropped in September 2025, and they set the bar sky-high from the start.
Alain Ducasse’s French-American Steakhouse
If you know the name Alain Ducasse, you already understand what kind of restaurant this will be. The legendary French chef – holder of more Michelin stars than most chefs have restaurant visits – is bringing a French-American steakhouse to Wynn Al Marjan that promises to completely reinvent the concept.
The restaurant spans two floors and covers roughly 1,820 square metres – making it one of the largest fine dining steakhouses in the Gulf region. Designed by Todd-Avery Lenahan, the interior has been described as dramatic, which is fitting for a restaurant where much of the action happens tableside. Think steaks carved in front of you, Baked Alaska flambeed at your table and a general sense that every course is a performance.
The menu leads with what Ducasse calls the “Beef Club” – a selection of some of the world’s finest cuts – alongside starters like Duck Foie Gras Brioche and Cheese Souffle. The whole concept is built around blending French precision with American steakhouse generosity. Playful, elevated and very much designed to become a destination in its own right.
For a city that’s already got no shortage of steakhouses, this one feels like it’s playing a completely different game.

Delilah – The Supper Club Making Its International Debut
If Ducasse is the fine dining headliner, Delilah is the one that’ll get the social media crowd booking flights to RAK.
Originally launched at Wynn Las Vegas by The h.wood Group (the same people behind some of LA’s most exclusive nightlife spots), Delilah has become the Strip’s most sought-after reservation. Celebrities, no-camera policies and a vibe that feels like stepping into a 1950s supper club from another era entirely.
The Al Marjan outpost will be Delilah’s first-ever location outside the United States. At 2,060 square metres across the resort’s first floor, it’s designed to feel like a journey – guests descend from a luxe bar and lounge area (complete with a cosy fireplace) into a spectacular dining room inspired by the golden-age supper clubs of El Morocco in New York, Maxim’s in Paris and Les Caves Du Roy in Beirut.
The menu carries over Delilah’s signature dishes – Beef Wellington and (yes, seriously) their famous Chicken Tenders – alongside new items spotlighting regional Middle Eastern ingredients. Live music and curated performances run nightly, so this is as much a going-out experience as it is a dinner.
Whether you’re planning a romantic dinner for two or a full-blown celebration with ten friends, Delilah is built for both. Just don’t expect to get a table easily once word gets out.

The Lebanese Restaurant (Name TBA)
The third concept to be partially revealed is a Lebanese restaurant helmed by a renowned restaurateur with roots in both Beirut and Paris. Details are still thin on the ground, but here’s what we know: it will serve breakfast exclusively to Enclave guests (the ultra-luxury wing of the resort), with lunch and dinner open to all guests.
Given the UAE’s deep love for Lebanese cuisine – and the fact that Wynn has chosen this as one of only a handful of early reveals – expect this to be a serious contender, not a token offering. We’ll update with the restaurant name and chef details as soon as they’re announced.
What Else Is Coming – The Full Cuisine Lineup
Beyond the first three headline names, Todd-Avery Lenahan (President and Chief Creative Officer of Wynn Design and Development) has confirmed that the resort’s 22-venue portfolio will span a seriously diverse range of cuisines. Here’s what’s been confirmed so far:
- Indo-Persian – a cuisine that’s still relatively rare in the UAE dining scene, blending Indian and Persian culinary traditions
- Italian – because no luxury resort is complete without one
- Japanese – expect this to be high-end, given Wynn’s track record with concepts like Mizumi in Las Vegas
- Greek – Mediterranean dining with an emphasis on seafood and coastal flavours
- Indian – a standalone Indian restaurant, separate from the Indo-Persian concept
- Lebanese – the partially announced concept mentioned above
- French-American – the Alain Ducasse steakhouse
That’s seven cuisines confirmed, with the remaining 15 venues (including bars, lounges and casual dining) still under wraps. Given Wynn Las Vegas runs everything from a lakeside seafood spot to a Cantonese fine dining room, don’t be surprised if we see Chinese, seafood and Latin American concepts round out the lineup.

Bars, Lounges and the Nightlife Scene
Food is only half the story. Wynn Al Marjan is building a full-blown nightlife and social scene to rival anything currently operating in the Emirates.
Aft Cocktail Deck
The first confirmed bar concept, the Aft Cocktail Deck is positioned as an outdoor drinking experience – think sunset cocktails with Arabian Gulf views. Given that Al Marjan Island sits right on the water, this could easily become one of the most photographed spots in RAK.
Lobby Bar
A staple of every Wynn property. The Lobby Bar at Wynn Las Vegas is one of the most atmospheric hotel bars in the world – all fresh flowers, low lighting and excellent cocktails. Expect the Al Marjan version to set the tone from the moment you walk in.
Pool Bars
With a 3.6-hectare poolscape (that’s roughly the size of three football pitches), Wynn is building multiple pool bars across the resort. Day-to-night drinking sorted.
Nightclub
Wynn operates XS in Las Vegas – consistently ranked among the world’s highest-grossing nightclubs. The Al Marjan nightclub hasn’t been named yet, but if Wynn applies the same playbook, RAK is about to get a nightlife venue unlike anything it’s had before.
Beach Club
Sitting right on the Arabian Gulf, the beach club will be adjacent to the main resort. Think daytime lounging, food and drinks, and the kind of beach-to-bar setup that Dubai’s beach clubs have made famous – except with significantly more space and significantly fewer crowds.
Food Hall
For something more casual, Wynn is building an on-site food hall. No details yet on format or vendors, but Wynn’s approach to casual dining at its Vegas properties (think quick-service restaurants that still feel premium) suggests this won’t be your average food court.

The Chef’s Table Partnership – A World First
In February 2026, Wynn Resorts announced a global partnership with Chef’s Table – the brand behind the award-winning Netflix culinary documentary series that’s introduced millions of viewers to the world’s most innovative chefs.
The partnership debuts at Wynn Las Vegas in September 2026, where Chef’s Table will transform Wynn’s Revelry tasting experience into a series of culinary events featuring talent from the series. Events include a one-of-a-kind nightclub dining experience at XS, a chef-paired golf tournament and a grand tasting event unveiling new dishes.
Here’s the part that matters for RAK: the partnership is confirmed to extend to Wynn Al Marjan Island upon its 2027 opening, with plans to infuse Arabian flavours into the culinary programming. This could mean exclusive dining events, pop-up concepts from internationally acclaimed chefs or ongoing residency programmes – all connecting the Netflix-famous Chef’s Table brand directly to Ras Al Khaimah’s dining scene.
If that doesn’t put RAK on the global foodie map, nothing will.
Behind the Scenes – The F&B Leadership Team
Building a 22-restaurant operation from scratch requires serious leadership, and Wynn has been assembling a heavyweight team to make it happen.
Leading the charge is Soumya Goswami, Senior Vice President of Food & Beverage, who oversees the entire dining portfolio. Alongside him, Andrew Burns serves as Vice President of Fine Dining, bringing decades of experience in luxury hospitality.
The leadership team has already kicked off a global recruitment drive for more than 3,500 food and beverage team members. And these aren’t just generic hospitality hires – Wynn is searching for highly specialised roles including masters of chocolate, pastry, dim sum, Chinese barbecue, Arabic sweets, cake artistry, butchery and mixology.
To train this army of culinary talent, Wynn has built a full culinary school within Wynn Oasis (the resort’s employee residential community). The school includes demonstration kitchens, training restaurants, a mixology laboratory and specialist training spaces – all part of Wynn University.
The message from Wynn is clear: food and beverage isn’t an accessory to the resort experience. It’s the engine.

The Al Marjan lineup is clearly leaning into Middle Eastern and South Asian cuisines more heavily than Vegas – which makes complete sense given the location and audience. The Indo-Persian concept alone is something you won’t find at any Wynn property worldwide.

Getting There – Location and Access
Wynn Al Marjan Island sits on Al Marjan Island, the man-made archipelago off the coast of Ras Al Khaimah. It’s approximately 50 minutes from Dubai International Airport and around 15 minutes from RAK city centre.
A major new piece of infrastructure is also on the way: the Wynn Bridge, a 548-metre bridge connecting Al Marjan Island directly to the UAE’s main highway network. Completion is expected by late 2026, meaning it should be operational before the resort opens. This will dramatically improve access to the island for both hotel guests and anyone heading over just for dinner.
For residents of RAK, Dubai and the Northern Emirates looking to try the restaurants without a hotel stay, the bridge (and the resort’s beach club/pool bar day-access model) should make it genuinely feasible as a dining destination rather than just a hotel experience.
What’s Still to Come
With only 3 of 22 restaurants officially named so far, there’s a lot still under wraps. Based on Wynn’s Las Vegas operations and hints from the development team, here’s what we’re watching for:
- A high-end Chinese restaurant – Wynn operates Wing Lei in Vegas, one of the only Chinese restaurants in North America to hold a Michelin star. A similar concept for Al Marjan feels inevitable.
- A dedicated seafood restaurant – You don’t build a beachfront resort on the Arabian Gulf without a seafood flagship.
- More details on the nightclub – If Wynn brings the XS brand or creates something new, it’ll reshape RAK’s entire nightlife scene.
- The food hall format – Multiple vendors? A single curated concept? This will be interesting.
